This week’s Bokenology takes us to Cooper’s Union, 104 Hudson St. This swanky Irish Pub opened in July and has been pushing the limits of what one expects from a local pub. The décor is inviting – polished wood tables that can be pushed together for large parties line the wall. Classic black and white photos are carefully grouped on the exposed brick throughout the bar, giving it a feeling of warmth.
Besides offering a great place to unwind after work, cocktail connoisseurs will want to sample the new drink menu. In a word – exceptional. There is a drink to whet almost any appetite – cocktails mixed with fresh raspberries, ginger, and even peppers. The list was created by owner Paddy Walsh, whose creations will make even the timid draft beer drinker a convert.
But beyond the cocktail experience, is the friendly staff, who will happily chat with you while pouring you a drink. One such notable bartender is Kelly, who is an easily recognizable face in town.
DS: How long have you been working at Cooper’s?
Kelly: Since the end of July.
DS: Describe a typical night.
Kelly: There is a good vibe going at happy hour, music on weekends, plus the many fun events.
DS: How long have you been bartending?
Kelly: For about 10 years. I started when I was 16.
DS: What do you like best about bartending?
Kelly: The people. And the fact that you never know what will happen on any given night.
DS: What is the strangest thing you ever heard bartending?
Kelly: I love when people come up and ask for a Grey Goose and vodka. You try to correct them and they ask you for it five times!
DS: What is the weirdest thing you ever witnessed?
Kelly: This 22-year-old girl comes in with her dad who was wearing hot pink blazer and a Hawaiian print tie. She’s yelling to me, “OMG, this is my father. We are celebrating that he’s coming out.” So I yell back, “He’s coming out! That’s great!” Then she says, “No, it’s just the first time he’s gone out drinking with me!” The dad says, “What?” And she says to him, “It’s nothing, dad.”
DS: How do you get ready for a night of work?
Kelly: The most important thing is leaving everything else going on in your life at the door. Leave your drama at the door!
DS: Biggest tip?
Kelly: $200 from four guys who had just won some money in AC. They were feeling generous.
DS: What was the best night here so far?
Kelly: Opening night! We had wall-to-wall people. There were about 50 bikers in here plus friends and family.
DS: Best drink you make?
Kelly: I’m legendary for my dirty martini. But now my new favorite is the Cooper’s Union.
DS: Can you give anyone advise for going out in Hoboken?
Kelly: Do not wait in line!
